    Bresaola is an air-dried meat traditionally made from beef--โ€‹but we're using venison. This recipe is the perfect gateway into charcuterie:
    It requires minimal ingredients, it's hard to screw up, and the end result is wildly delicious and surprisingly tender. Backstrap is the best cut to use here, but if you'd rather save that for steaks and roasts, fillets from the hindquarters work well, too. The recipe's cure gives the bresaola a peppery finish, so it's a natural fit in an arugula salad with fresh Parmesan. It's also terrific on sandwiches, or with an assortment of cheeses, preserves, and crackers. And it's not bad all on its own, either. --C.K.

    I've seen a product similar to that on a biltong website - called "Boerewors" or "Droรซwors" (2 different things, not sure which is more like the recipe above). Might have to give that recipe a swing, my neighbors and I are big fans of charcuterie.

    Smoked meat, cheese, crackers and alcohol are among my favourite things. Making any of those yourself just increases the awesomeness.

    Like, from scratch smoked cheese? I really haven't lived have i?

    It's much easier to buy some good cheese and toss it into a cold smoker. I got to do that a few weeks ago for thanksgiving... we put something like 14-15 different cheeses in for a couple of hours. The real standouts were blue/gorgonzola and an Irish cheddar.

    My family are the type of people that eat american, cheddar and provolone. That's it.

    Here's a silly question - what is "american" cheese? Is that like velveeta? Some kind of cheddar?

    It's those insipid little cellophane-wrapped squares. Not actually cheese.

    Yeah. You have to check the ingredients list to see if any milk products were actually used in making it

    If it says "Deluxe" it's actual cheese

    If it says "Specially formulated to not melt"...it's not cheese, lol.

    Thanks to working in the International Book Fair of Guadalajara I have gotten to meet many famous and really interesting people mostly writers of course. Just last week in this years fair, I got to meet and speak with Rigoberta Menchu while having breakfast. I also spoke with John Kazenback and asked him to sign a book for my cousin since she is a really big fan of him.

    But the most famous person I have met and I really admire is my own cousin =), Javier Hernandez Balcazar also known as Chicharito . He is currently one of the most famous soccer players in Mexico and is known worldwide thanks to having played for Manchester United and Real Madrid. He is currently living in Germany and playing for Bayern Leverkusen.

    Have one user that uses one of these daily. He is the main sales guy here. I really like this laptop.
    Another user brought her personal Spectre in today for setting up a vpn connection. Still really like it, but that trackpad is atrocious. If your hands are larger than a cute kitten's paw good luck typing anything on the kb without touching the trackpad and moving the focus to some random part of the screen. There is also a bit too much vertical travel when trying to press the buttons in the trackpad.

    Man, do I hate trackpads of any kind. So this is a sweet laptop all around for someone who owns a USB mouse?

    I use a mouse for everything. Trackpads are terrible. At least non-Mac ones mostly work. Mac trackpads, the worst ever.

    Especially the gigantic, more recent ones. I had a 2009 MacBook (not pro) that had the sweetest trackpad on it... and I hate trackpads, lol.

    YEah, the new enormous ones, they make the keyboard hardly reachable.

    And when he claps, the room he is in turns on the lights, but the room down the hall turns off where he wife was. Multiple clappers gets you into a crazy game of turning random things on and off.

    I just hope FitBit has fixed the problem with the adhesives on their bands. I've had to super glue my band on for the second time in a year.

    If you email them and ask they will send you a brand new one. They did for my wife twice now.

    Mine is already out of warranty. I did have them do that the first time. The second band was better -- it lasted almost a full year... If you are telling me they'll still ship me another one, then dang, I need to go to their site and see!

    It is worth sending them an email and asking. I can't remember if hers was a year old or not, but I know she got the same one replaced twice.

    Sad that is required but glad they replaced it for her

    This would be perfect for it's own thread. But here is the list that we normally talk about:

    Amazon AWS Azure Google Cloud Softlayer Rackspace Digital Ocean Vultr Linode

    The top four are essentially non-applicable for the SMB space, they are full clouds with full cloud mentality that expect a full DevOps team to manage them. Rackspace has support issues and costs way too much, so while they are okay and we used to use them, we wouldn't touch them today.

    DO,Vultr and Linode have become our three "go to" cloud providers. They all do different things, are great to work with, focus on the VPS functionality needed in the SMB, are similar in price and make sense for the vast majority of the market. We are posting this on the ML servers hosted at Linode as we speak ๐Ÿ™‚

    I have an embarrassingly large number of hours logged. I'm not sure how it compares to my Civ IV hours since I played that mostly pre-Steam. The game itself is good, but where it really shines is with mods.
