      Not to mention zombies on a treadmill with brains hanging in front of them as a source of infinite energy.

        @Nic But how do you get the brains to not spoil?

        Presumably the zombies don't want rotten flesh. And more importantly, how do you get fresh brains?

              Technically you don't need brains on the treadmill, I was just thinking of a comic I saw. The zombies just need to know you are inside and the treadmills have to be pointed towards the fortress. Your lovely brains wafting over the walls are all that is needed.

                            Hydroponic is a super easy way to grow if you have electricity and proper liquid nutrients.

                                  It might be, but if you're working on getting power / fortifications in place, you'd want the users to be useful. They can move dirt and make a basic roof top garden that would support the region.

                                  Also there are about 6 million walmarts in every direction.

                                  Not to mention the countless farms in almost every region.

                                    you can do it without electricity pretty easily. you can substitute fish / aquaculture for the nutrient liquids if you really, really know what you are doing.

                                    But yeah, access to the manufactured chemicals would be the killer. That would be harder to obtain than just normal food in that situation.

                                    FYI... grew up on a farm, family has been farmers since before coming to the new world in 1635. I've visited and studied both of the NASA research hydroponic facilities, toured commercial hydroponics, done some study of hydroponics at Cornell (not as a student) and have read every major textbook on them on the market 🙂

                                          This is where you barter with Mennonite and Amish areas. You kill zombies in exchange for food/seeds, and training if you don't have it. They will need protection as many of them will not know or be willing to do much to protect themselves. And the Mennonites at least would be thrilled to teach.

                                            Your theory is dependent on a lot of assumptions that IT people will have unlimited access to food, unlimited access to transport and stockpiles, the ability to protect said caches before others come for them or zombies get you, etc. That's a lot of "this would solve all problems" as your underlying theory. Anyone who had reasonably unlimited access to water, food and security could just ride out the whole thing. Don't need to be IT people or even sentient at that point. If my cat had unlimited food, water and was in a secure facility it could outlive the zombies.
