Just curious if there is a way to put more details into the upper view of the below screenshot.
Ideally the number of pages printed.
Anyone know if this is possible?

I don't know specifically for that but you can use Papercut Print Logger for free and it has a lot of detail.

How does that tie into the print server to grab the logs and parse them out?

You install it on the print server and it creates more detailed logs for you. Not exactly an answer to your question but it's a way to get what you want.

I would be okay with a print monitor that I could install to a VM, that would simply connect to my printers and pull the details from those.
But I have a feeling I'd be losing things like who printed what job.

@DustinB3403 I attempted to do this at the hospital I used to work at and they denied the local client install (which I expected). I learned that not all printers allow for pulls of their print logs too. I had a p1102w that showed it's prints in the about tab in printer properties, but it was never actually accurate.

You /could/ turn on Operational Event logs for PrintService in Windows Server, then make an xml collector that adds up Param 8 from Event ID 307 in that log over a given time. Or get software where someone has already done that. (papercut prob does this).
