From what I can gather though, it should activate against my KMS server. I'll go ask on the Technet board too since that's where Naresh pointed me to.
Something so simple... I can't believe there's no (easy to find) documentation that states "You can [or cannot] use your existing KMS server to activate Windows 10 IOT.
It was annoying to find those details!

I totally misread the opening post - KMS - key management system - you want the IOT installs to get their license key from a local KMS server.
Sadly I read to quickly, and read it as KVM - the hypervisor... my mistake.
Now - surely Scott didn't make that mistake.

Though - now that I think about it - does IOT require activation? I thought it was free?
If there is an enterprise version of IOT - I have no clue

@Dashrender iot core is free. Iot enterprise needs a licence. Anyway iot stuff usually requires you to activate the first image. Then you clone them.

I did find an answer to the question, though... According to one of the MSDN Moderators, Windows 10 IOT will activated against an existing KMS server without any problems.

In my reading, Windows 10 IOT will attempt to activate (nor will it complain) if you never connect the device to the internet. Of course, once you connect it, it will try to activate.

By default, KMS clients on your Windows IoT Enterprise with no additional configuration needed.It will act like a regular desktop and activate against your KMS server if you hook it up to the network.
