And of course it started right as I picked up my keys to go to lunch. All the things have been gracefully shut down but it's getting super warm in the server room without our supplemental AC.

Luckily, no. We usually open the door and shut everything down if we're looking at more than an hour of outage. And we have an oscillating fan.
Wouldn't an evaporative cooler bring in a lot of humidity?

Less than dealing with the cost of researching, purchasing, storing, and maintaining one.
Unless you use it many times, which means you have other problems.
