      This is an easy and delicious side dish for your summertime grilling. For adults only, as not all the booze gets cooked out.

      Ingredients:

      4 peaches, halved and pitted

      1 whole pineapple, peeled and cored (you can buy it like this in a plastic container)

      ~300mL Bourbon (I used Bulleit)

      ~400-500mL Dark Rum (I used Mt. Gay - just don't use spiced rum)

      Place the peaches cut side down in a glass baking dish and cover with bourbon. Take the pineapple, pour off any juice in the plastic container, then cover completely with rum and put the lid back on. Let these soak for at least 48 hours. The pineapple can soak for even longer, up to a week, but the peaches will absorb most of the bourbon within 48 hours. Grill on a super hot grill (oil it first) until there are nice marks on all sides. Serve as is or with ice cream. Yes, these will get you drunk.

      Pro tip: Any liquid left in either container will be fruit infused and delicious!
